Being a mom is a hard job, so when I found out the Fairmont Olympic in Seattle offered afternoon tea, I just had to go. I invited my good friend Julie to join me on a Mom’s day out for some champagne, tea, sandwiches and pastries. Whether you are visiting the Seattle area or local to the area, this is a must do!
The Fairmont Olympic is conveniently located in downtown Seattle, so it’s within walking distance to popular attractions such as Pike Place Market, the Seattle Public Library, South Lake Union and much more.
Lately, I’ve been daydreaming about going back to Thailand to relax on the beach, care for the elephants, shop at the night markets, and especially the food. Thai food is unique in the sense that it has so many complex flavors such as sweet, sour, and spicy, yet it’s so easy to make. After spending 2 weeks in Thailand, we tried so many dishes that included curries, soups, stir-fry, and meals specific to the different regions of the country. My favorite easy-to-make dish is Pad Thai.
This is my quick and easy kicked up version of Pad Thai infusing traditional flavors, but adding some extra kick and flavor. You can create this flavorful meal in less than 10 easy steps.

Cooking at home during the week is hard to do after a long day at work. However, I love coming home to see my dogs, change into comfy clothes and just unwind and relax. I created this easy chicken skewer recipe that is bursting with flavor. Plus, this meal is low in fat since you are grilling and eating your veggies!
