Chimichurri marinated chicken skewers

Cooking at home during the week is hard to do after a long day at work. However, I love coming home to see my dogs, change into comfy clothes and just unwind and relax. I created this easy chicken skewer recipe that is bursting with flavor. Plus, this meal is low in fat since you are grilling and eating your veggies!



1. Gather your ingredients

IMG_42192. Pile in the parsley, jalapenos, garlic, olive oil, lemon juice and S&PIMG_42223. Blend until it’s liquidity about 30-45 seconds. Use a small blender for easy clean-up.IMG_42164. Dice 2 chicken breasts into 1 inch cubesIMG_42155. Marinate the chicken in a Ziploc bag for at least 30-60 minutes to soak in the yummy flavorsIMG_42146. Meanwhile, chop up the vegetables into roughly one inch cubesIMG_42137. Roll up your sleeves, and prepare the skewers alternating between chicken and various veggiesIMG_42128. Grill the skewers for 4-5 minutes on each side on medium-high heatFullSizeRender (12)9. Plate your skewers with your favorite carb such as potato, rice, pasta, etc. If you’re going the healthy route (like my husband), make a salad or it’s perfect as is!IMG_4211I’ve also made this recipe with cilantro instead of parsley and with lime instead of lemon. There are so many different variations. You just have to try it, then, modify according to what you like.
